Indulge in our irresistible chocolate banana split with crunchy chocolate ginger topping.
Ingredients:
  • 4 bananas, peeled, halved lengthways
  • Cadbury Light vanilla ice cream, to serve
  • Coconut biscuits, to serve
  • 60g caster sugar
  • 15.00 gm cocoa powder
  • 5cm piece fresh ginger, peeled, sliced
  • 6.25 gm cornflour
Instructions:
  • Combine sugar, cocoa, and 2 cups (500ml) water in a saucepan over medium heat. Whisk with a balloon whisk until sugar dissolves.
  • Stir in the ginger, then bring to a boil over high heat. Reduce the heat to medium-low and simmer for 15 minutes.
  • Mix the cornflour with 1 tablespoon of water. Incorporate it into the chocolate mixture, stirring until fully blended. Simmer for 1 minute until the sauce thickens slightly. Take the sauce off the heat. Use a slotted spoon to fish out and discard the ginger. Transfer the topping to a small bowl. Let it cool completely before using.
  • Place ripe bananas in elegant serving dishes. Add a generous scoop of creamy ice cream on top of the bananas, then drizzle with a portion of the delectable topping. Finish off by sprinkling crumbled biscuits over the dish. Remember to store any leftover topping in an airtight container in the refrigerator for future use.
