Indulgent chocolate brownies with a rich, nutty taste.
Ingredients:
  • 2 x 220g packets macadamia cookies
  • 250.00 ml salted peanuts, chopped
  • 107.50 gm caster sugar
  • 185ml can Light & Creamy evaporated milk
  • 400g dark chocolate, chopped
  • 85.80 gm firmly packed crunchy peanut butter

Instructions:
  • Prepare a 20cm x 30cm lamington pan by greasing it and lining the base and sides with baking paper, leaving a 2cm overhang on the long ends.
  • Pulse biscuits in a food processor until fine crumbs form. Transfer to a bowl and mix in peanuts and caster sugar.
  • In a saucepan over low heat, melt together milk, chocolate, and peanut butter until smooth, stirring constantly for 3 to 4 minutes. Add to biscuit mixture and stir well to combine. Press the mixture into a prepared pan, smooth the top, and cover. Chill in the refrigerator for 4 hours until set. Sprinkle with icing sugar, slice into 48 pieces, and enjoy!
