Indulgent chocolate mint tart: a showstopper dessert.
Ingredients:
  • 225g plain flour
  • 32.00 gm brown sugar
  • 20.00 gm baking cocoa
  • 150g butter, chilled, cubed
  • 60ml milk
  • 300g dark chocolate, finely chopped
  • 375ml thickened cream
  • 80ml creme de menthe
  • Double cream, to serve
  • Fresh mint leaves, to serve
Instructions:
  • In a food processor, blend together the flour, sugar, cocoa, and butter until you have fine crumbs. Then, add the milk and process until the mixture just comes together.
  • Gently knead the dough on a floured surface until it's about 5mm thick. Use it to line a 20cm fluted flan tin with a removable 20cm base that's 3.5cm deep. Trim any extra dough. Place the tin on a baking tray, prick the base with a fork, and refrigerate.
  • Preheat the oven to 180°C. Line the base with non-stick baking paper and fill it with rice or baking beans. Bake for 10 minutes, then remove the paper and rice/beans and bake for an additional 10 minutes. Allow to cool completely before proceeding.
  • In a heatproof bowl, add the chocolate. Heat the cream in a saucepan until hot, then pour it over the chocolate. Let it sit for 2 minutes, then stir until smooth. Mix in the creme de menthe. Pour the mixture into the pastry case and refrigerate overnight. Serve with double cream and mint leaves.
