Gluten-free pudding pots: perfect for breakfast or snack on-the-go.
Ingredients:
  • 375.00 ml white quinoa, rinsed, drained
  • 757.50 gm unsweetened low-fat coconut milk
  • 25.00 gm cocoa powder
  • 70.95 gm caster sugar
  • 3 small bananas, sliced
  • 42.90 gm honey, to drizzle
Instructions:
  • In a medium saucepan over medium heat, combine quinoa, coconut milk, cocoa, and sugar. Bring to a gentle simmer, then reduce heat and cook uncovered for 15 minutes until quinoa is tender and the milk mixture is absorbed. Remove from heat and let cool.
  • Divide the quinoa mixture into 6 half-cup-capacity airtight containers. Chill until needed. Add banana slices and a drizzle of honey right before packing in the lunchbox.
