Kid-friendly ice cream and jelly muffins for a quick and delicious dessert.
Ingredients:
  • 85g packet creaming soda jelly crystals
  • 250.00 gm boiling water
  • 4 choc-chip muffins
  • 46.20 gm vanilla ice-cream, softened
Instructions:
  • In a large heatproof bowl, combine jelly crystals with boiling water and stir until dissolved. Mix in 200ml of cold water. Chill in the refrigerator for 2 hours, or until set.
  • With a small sharp knife, remove the tops of the muffins and set them aside. Using a melon baller or teaspoon, carve out the center of each muffin, leaving a 5mm border. Fill each muffin with 2 tablespoons of jelly. Using the melon baller or teaspoon, add a scoop of ice cream to the center of each muffin. Sandwich with the muffin tops and transfer to plates before serving. Enjoy!
