Indulge in the trendy treat of whoopie pies with endless flavor possibilities!
Ingredients:
  • 2 heaped tablespoons cocoa powder plus extra for dusting
  • 350 g self-raising flour
  • 175 g sugar
  • 200 ml milk
  • 100 ml nut or rapeseed oil
  • 1 large free-range egg
  • 240 g dulce de leche
  • 3 bananas
  • icing sugar for dusting
Instructions:
  • Preheat the oven to 170ºC/325ºF/gas 3 and line 2 baking sheets with greaseproof paper. Make a paste with warm water and cocoa powder, then combine it with the rest of the whoopie ingredients to form a smooth batter. Drop spoonfuls of batter onto the sheets, bake for 8 minutes until cooked. Cool slightly on the sheets, then transfer to a wire rack to cool completely. Spread dulce de leche on half the whoopies, top with sliced bananas and sandwich with the remaining halves. Dust with icing sugar and cocoa powder before serving.
