Chocolate and orange brioche pudding

Decadent brioche bread pudding filled with luscious chocolate chunks.
Ingredients:
  • 8 Toscano Milk & Honey Brioche Rolls, halved lengthways (see notes)
  • 40g butter, at room temperature
  • 100g dark chocolate, coarsely chopped
  • 435ml (1 3/4 cups) milk
  • 250ml (1 cup) pouring cream
  • 3 eggs
  • 55g (1/4 cup) caster sugar
  • 20.00 ml finely grated orange rind
  • Vanilla custard, to serve (optional)
Instructions:
  • - Preheat your oven to 160C/140C fan forced. - Generously spread the cut side of the brioche rolls with butter. - Layer half of the rolls in a 1.25L (5 cup) loaf pan, slightly overlapping. - Sprinkle half of the chocolate over the rolls. - Repeat the process with the remaining brioche and chocolate to create delicious layers.
  • Combine milk, cream, eggs, sugar, vanilla, and orange rind in a bowl and whisk until smooth. Pour over brioche mixture and let it sit for 10 minutes to soak up the flavors.
  • Place the loaf pan in a roasting dish and fill with boiling water halfway up the sides. Bake for 1 to 1 hour 10 minutes until the pudding is set. Serve warm with optional vanilla custard.
