Indulge in irresistible ice cream sandwich delights.
Ingredients:
  • 75g unsalted butter, at room temperature
  • 125g brown sugar
  • 4.40 gm vanilla extract
  • 1 egg yolk
  • 100g (3/4 cup) plain flour
  • 1.00 gm baking powder
  • 35g (1/3 cup) Dutch cocoa
  • 400g store-bought vanilla ice-cream
  • 1 orange, zested
  • 52.80 gm Seville orange marmalade
Instructions:
  • Prepare your baking pan by greasing and lining it with baking paper. Soften your vanilla ice-cream in a large bowl, then mix in the zest and marmalade. Spread the mixture in the pan, smooth the top, cover with baking paper, and freeze for 1 hour until firm.
  • Beat butter and sugar with an electric mixer until pale and fluffy. Add vanilla and egg yolk; beat until combined. Sift flour, baking powder, and cocoa over the mixture and stir until dough is just combined.
  • Preheat your oven to 180C. Line a large oven tray with baking paper. Place the dough between 2 sheets of baking paper and roll it out into a 22cm x 35cm rectangle that is 7mm thick. Gently transfer the dough to the tray and refrigerate for 10 minutes until firm.
  • Cut out 8 cookies with a fluted pastry cutter. Spread them 3cm apart on a lined oven tray. Bake for 15 minutes or until they are dry to the touch. Let them cool for 5 minutes and then transfer them to a wire rack to cool completely.
  • Take ice-cream out of the freezer. Fill a small heatproof bowl with hot water. Dip the fluted pastry cutter in water and cut out ice-cream shapes. Place ice-cream between two cookies to make a sandwich. Repeat with the rest of the cookies and ice-cream to create 4 sandwiches. Put them on a tray and transfer to the freezer. Chill for at least 10 minutes before serving.
