Chocolate Applesauce Cake I

Decadent chocolate cake made moist with applesauce, studded with raisins and pecans. Egg-free and irresistibly dense for chocolate enthusiasts.
Ingredients:
  • 0.5 cup butter
  • 1.25 cups white sugar
  • 0.5 cup milk
  • 1.5 cups applesauce
  • 2 tablespoons dark rum
  • 2 cups all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.125 teaspoon salt
  • 1 cup raisins
  • 1 cup chopped pecans
  • 0.25 cup dark rum
Instructions:
  • Combine the butter or margarine with the sugar in a bowl, then mix in the milk, applesauce, and 2 tablespoons of rum until creamy.
  • In a separate bowl, combine the flour, cocoa, baking soda, spices, and salt. Mix into the creamed mixture, then fold in the raisins and pecans.
  • Pour the batter into a prepared 9x13 inch baking pan. Bake in a preheated 350°F (175°C) oven for 45 minutes or until a toothpick comes out clean.
  • While the cake is still warm from the oven, generously sprinkle it with the remaining 1/4 cup of rum. Allow the cake to cool on a rack. For best flavor, let the cake rest for a day before serving. Serves 20.
