Authentic Austrian cake recipe passed down through generations. For maximum flavor and softness, prepare a day ahead.
Ingredients:
  • 4 eggs, separated
  • 1 cup butter
  • 1.6666699647903 cups white sugar
  • 1 cup brewed black tea, cold
  • 2 cups all-purpose flour
  • 1.5 tablespoons baking powder
  • 0.33333298563957 cup dry bread crumbs
  • 0.33333298563957 cup unsweetened cocoa powder
  • 1 cup chopped hazelnuts
Instructions:
  • Preheat your oven to a toasty 360 degrees F (180 degrees C) while you generously grease and flour a 9-inch Bundt pan.
  • Cream together egg yolks, butter, and white sugar until light and fluffy in a large bowl. Gradually beat in black tea. Combine flour, baking powder, bread crumbs, cocoa powder, and hazelnuts; fold into the tea mixture until just incorporated.
  • Whisk the egg whites in a spotless glass or metal bowl until stiff peaks form. Gently incorporate the fluffy egg whites into the tea batter. Transfer the mixture into the prepared pan.
  • Bake in the preheated oven for 60-70 minutes until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for at least 20 minutes before transferring to a wire rack to cool completely.
