Chocolate Buttermilk Bread

Buttermilk pecan bread with rich chocolate pecan icing.
Ingredients:
  • 0.5 cup butter
  • 1 cup white sugar
  • 1 cup buttermilk
  • 1.75 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.33333331346512 cup chopped pecans
  • 0.5 cup margarine
  • 0.25 cup unsweetened cocoa powder
  • 5 tablespoons milk
  • 0.5 cup chopped pecans
  • 1 (16 ounce) package confectioners' sugar
Instructions:
  • Preheat the oven to 350°F and grease only the bottom of a 9x5 inch loaf pan.
  • Cream butter and sugar until light and fluffy in a large bowl. Add eggs one at a time, then mix in buttermilk. Combine flour, 1/2 cup cocoa, baking powder, baking soda, and salt; fold into buttermilk mixture until moistened. Stir in 1/3 cup pecans. Pour into prepared pan.
  • Bake in the preheated oven for 55 to 65 minutes, or until a wooden pick inserted near the center comes out clean. Let it cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
  • In a saucepan over medium heat, melt the margarine with 1/4 cup cocoa and milk until smooth. Remove from heat, then stir in vanilla and confectioners' sugar. Mix in the remaining 1/2 cup pecans. Spread over the cooled loaf.
