Indulge in scrumptious chocolate chip pumpkin bread, ideal for afternoon tea or a delightful lunchbox treat.
Ingredients:
  • 300g self-raising flour
  • 220g brown sugar
  • 250g pumpkin
  • 125ml buttermilk
  • 150g butter, melted
  • 2 Free Range Eggs
  • 130g chocolate chips
  • 55g walnut
  • Pepitas (pumpkin seeds), to sprinkle
  • Chopped walnuts, extra, to sprinkle
  • Dark choc chips, extra, to sprinkle
Instructions:
  • Preheat your oven to 180°C. Grease and line a 10cm x 24cm loaf pan with baking paper, leaving some paper to hang over the sides.
  • In a large bowl, mix together the flour and sugar. In a separate bowl, whisk together the pumpkin, buttermilk, butter, and eggs until fully combined. Add this mixture to the flour mixture along with the chocolate chips and walnuts. Stir until everything is well combined. Spoon the batter into the prepared pan and level the top. Sprinkle with pepitas, extra walnuts, and extra chocolate chips.
  • Bake the dish for 1 hour or until a skewer inserted in the center comes out clean. Let it rest in the pan for 10 minutes, then transfer to a wire rack to cool. Serve either warm or at room temperature.
