Indulgent milk chocolate and plump cherries soaked in kirsch – a divine combination!
Ingredients:
  • 100 g sour cherries
  • 3 tablespoons kirsch or fresh orange juice
  • 250 ml milk
  • 50 g unsalted butter plus extra for greasing
  • 1 large free-range egg
  • 2 tablespoons cherry compôte or jam
  • 500 g strong bread flour plus extra for dusting
  • 2 teaspoons ground cinnamon
  • 2 heaped tablespoons cocoa powder
  • 2 x 7 g sachets of dry yeast
  • 75 g quality milk chocolate chips
  • 75 g caster sugar plus extra for glaze
  • 50 g plain flour
  • 3 tablespoons runny honey
Instructions:
  • The night before making the buns, soak the sour cherries in kirsch or orange juice. The next day, warm milk and butter in a pan until the butter melts. Remove from heat, cool slightly, then whisk in the egg and compôte. Drain cherries, discard soaking liquid, and combine with bread flour, cinnamon, cocoa powder, yeast, chocolate chips, caster sugar, and 1 teaspoon salt. Make a well, pour in the milk mix, and stir until a smooth dough forms. Knead on a floured surface for 10 minutes. Let rise for 1 hour until doubled. Grease baking trays, shape dough into balls, and let rise again for 45 minutes. Preheat oven to 190ºC/gas 5. Mix plain flour and water to a thick consistency, pipe crosses on buns, and bake for 20-25 minutes. Make glaze by warming honey and sugar, then brush buns for a sticky finish. Cool and serve.
