Hot cross bun puddings

Transform hot cross buns into quick and delicious desserts.
Ingredients:
  • 4 chocolate hot cross buns, split
  • 25g butter, softened
  • 20.00 ml raspberry conserve
  • 15.00 gm Cocoa Powder
  • 257.50 gm milk
  • 3 eggs, lightly beaten
  • 83.33 gm double thick cream
  • Icing sugar mixture, to serve
Instructions:
  • Generously coat 4 microwave-safe 11cm round dishes with a touch of oil for easy removal.
  • Spread a layer of butter followed by raspberry conserve on the cut sides of each bun. Gently press the buns back together to create a sandwich. Carefully cut each bun into quarters without separating the pieces completely. Place the prepared buns in the serving dishes.
  • In a jug, combine sugar and cocoa. Slowly whisk in milk until smooth. Mix in egg and vanilla. Divide the mixture among dishes. Press buns into the mixture gently to cover.
  • Loosely cover each dish with plastic wrap and microwave two at a time on HIGH for 2 to 3 minutes until custard is just set. Finish by adding a dollop of cream and serving with a sprinkle of icing sugar.
