Elevate your baking with spicy chocolate cookies.
Ingredients:
  • 125g salted butter, softened
  • 1⁄180.00 gm brown sugar
  • 1⁄215.00 gm caster sugar
  • 100.00 gm traditional rolled oats
  • 1⁄150.00 gm self-raising flour
  • 1⁄150.00 gm wholemeal self-raising flour
  • 100g dark chocolate, melted
  • 2.50 gm ground cinnamon
  • 1⁄2 tsp vanilla bean paste
  • Pinch dried red chilli flakes
Instructions:
  • With an electric mixer, whip the butter and sugars until they are light and creamy. Incorporate the egg thoroughly. Add the oats and flours, then mix with a wooden spoon until well combined.
  • Preheat the oven to 190°C/170°C fan-forced and line 2 baking trays with baking paper. Mix melted chocolate, cinnamon, and vanilla into the basic dough until well combined.
  • Shape 2 level tablespoons of mixture into 16 balls. Arrange on prepared trays, leaving space between each. Flatten slightly with the palm of your hand into 5.5cm rounds. Sprinkle with chili flakes. Bake for 15 minutes, switching trays halfway through, until lightly golden. Let cookies rest on trays for 5 minutes before moving to a wire rack to cool. Serve and enjoy!
