Chocolate Chip Cookie Dough Stuffed Brownie Pops

Indulgent cookie dough-filled brownie pops, dunked in rich chocolate - a luxurious treat for any occasion.
Ingredients:
  • 1 box (18 oz) Betty Crocker™ Delights Supreme Chocolate Chunk Brownie Mix
  • 1/3 cup vegetable oil
  • 1/4 cup water
  • 4 oz cream cheese, softened (from 8-oz package)
  • 1/2 cup creamy peanut butter
  • 2 tablespoons packed brown sugar
  • 1 teaspoon vanilla
  • Pinch of salt
  • 1/2 cup powdered sugar
  • 1/3 cup miniature semisweet chocolate chips
  • 2 cups semisweet chocolate chips
  • 2 tablespoons vegetable oil
  • Desired toppings, such as candy sprinkles or chopped pecans
  • 15 paper lollipop sticks
Instructions:
  • Preheat oven to 350°F and line a 13x9-inch pan with foil. Mix Brownie ingredients in a medium bowl until well combined. Spread the batter in the pan and bake for 20 to 22 minutes until a toothpick inserted 2 inches from the edge comes out almost clean. Allow to cool for 5 minutes, then freeze for about 15 minutes until completely cooled and firm. Remove from the pan by peeling away the foil. Set aside.
  • In a medium mixing bowl, use an electric mixer to blend together cream cheese and peanut butter until smooth. Add brown sugar, vanilla, and salt, and continue mixing until fully combined. Gently fold in miniature chocolate chips.
  • Cut the brownies into 6 by 5 rows to make 30 squares. Spread approximately 1 tablespoon of cookie dough filling on the bottom side of 15 brownie squares and top with the remaining brownie squares. Insert a lollipop stick through each brownie stack, ensuring the stick goes through all layers but not completely through the bottom brownie to secure the stack. Place the brownie stacks on a cookie sheet and freeze for about 20 minutes until firm.
  • Line a cookie sheet with waxed paper. In a medium microwave-safe bowl, microwave 2 cups of chocolate chips and 2 tablespoons of vegetable oil on High for 30 to 60 seconds, stirring every 15 seconds until melted and smooth. Dip each brownie stack into the melted chocolate, then use a spatula or knife to spread the chocolate evenly on the brownie pops, scraping off any excess. Sprinkle with your desired toppings right away.
  • Chill for around 15 minutes until the chocolate is firm. Keep refrigerated until needed.
