Indulge in irresistible chocolate chip cookie dough bites that are totally worth the effort for a rich and satisfying treat.
Ingredients:
  • 1.5 cups finely crushed chocolate wafer cookies
  • 2 tablespoons white sugar
  • 0.25 cup melted butter
  • 2 (8 ounce) packages cream cheese, cut into chunks
  • 0.75 cup white sugar
  • 1 cup sour cream
  • 3 large eggs
  • 0.25 cup butter, softened
  • 0.25 cup firmly packed brown sugar
  • 1 cup semisweet chocolate chips
  • 0.5 cup all-purpose flour
  • 2 teaspoons white sugar
Instructions:
  • Preheat the oven to 350°F (175°C) to create the perfect cooking environment.
  • Combine the chocolate wafer cookie crumbs, 2 tablespoons of white sugar, and melted butter in a bowl, then firmly press the mixture into the bottom and up the sides of a 9-inch springform pan.
  • Bake the crust in the preheated oven for 8 minutes until set.
  • In a bowl, whip cream cheese with 3/4 cup plus 2 tablespoons sugar until creamy. Mix in 1 cup sour cream, eggs, and 1 teaspoon vanilla extract until batter is smooth. Pour over crust in springform pan.
  • In a bowl, cream together 1/4 cup butter, brown sugar, and 1/4 cup white sugar. Mix in water and 1 teaspoon vanilla extract. Add chocolate chips and flour, and stir until cookie dough is mixed well. Spoon the cookie dough in 2 tablespoon portions evenly over the cheesecake batter, gently pushing it below the surface.
  • Bake in the preheated oven for about 40 minutes, until the cheesecake is almost set and slightly jiggles in the center when shaken.
  • Combine 1 cup sour cream with 2 teaspoons white sugar and 1 teaspoon vanilla in a bowl, whisk until smooth. Gently spread the mixture over the hot cheesecake. Allow the cake to cool to room temperature, then chill in the refrigerator for at least 4 hours before serving.
