Chocolate Chip Cookies (Gluten Free)

Indulgent chocolate chip cookies—no gluten or eggs!
Ingredients:
  • 0.75 cup butter, softened
  • 1.25 cups packed brown sugar
  • 1 teaspoon gluten-free vanilla extract
  • 0.25 cup egg substitute
  • 2.25 cups gluten-free baking mix
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 12 ounces semisweet chocolate chips
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and get that baking sheet greased up and ready to go.
  • Cream together the butter and sugar in a medium bowl. Slowly incorporate the replacer eggs and vanilla as you mix. Combine gluten-free flour mix, baking soda, baking powder, and salt, then fold them into the butter mixture until well combined. Lastly, mix in the chocolate chips.
  • Drop cookie dough by the teaspoonful onto a prepared baking sheet, spacing them 2 inches apart. Bake in a preheated oven for 6 to 8 minutes, or until golden brown. Allow the cookies to cool on the baking sheet for 2 minutes before transferring them to wire racks.
