Quick and delicious Chocolate Chip Peanut Butter Energy Balls. Perfect for a quick snack and freezer-friendly.
Ingredients:
  • For the energy balls:
  • 1 1/2 cup old-fashioned rolled oats (gluten-free, if needed)
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey
  • 1/4 cup mini chocolate chips
  • For the coating:
  • 1/4 cup whole roasted almonds (or substitute peanuts, pecans, or walnuts)
  • 1 tablespoon powdered sugar
  • 1/8 teaspoon ground cinnamon
  • Pinch kosher salt (if almonds are unsalted)
Instructions:
  • Pulse the oats in a food processor for 10 seconds until some pieces resemble sand and others are almost whole - the perfect texture.
  • In a small bowl, mix together peanut butter, honey, and vanilla extract until well combined. Add oats and chocolate chips, then stir with a wooden spoon until the mixture is thick and pliable like playdough.
  • Prepare the almond sugar powder: Combine almonds, powdered sugar, cinnamon, and salt in the food processor. Pulse until it resembles fine sandy gravel, ensuring almond bits are smaller than mini chocolate chips.
  • - Form the balls: Take approximately 1 teaspoon of dough and shape it into a ball by rolling it gently between your hands. The mixture may be slightly crumbly, but it should stick together when pressed firmly. If needed, incorporate another tablespoon of peanut butter. Repeat until all the dough is utilized, and arrange the balls on a sheet pan or platter lined with wax paper.
  • Coat the balls twice for maximum flavor and texture: Roll each energy ball in the almond mixture to coat thoroughly. Repeat the process for a second coating to ensure a perfect crunch without any sogginess.
  • For storage: Keep in the fridge for 2 weeks. For freezing, lay them in a single layer on a platter or baking sheet until firm. Then, transfer to a zip-top bag and freeze for up to 3 months.
