Ingredients:
  • 4 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 cups sugar
  • 3/4 cup butter or margarine, softened
  • 4 eggs
  • 1/2 cup water
  • 1 can (15 oz) pumpkin (not pumpkin pie mix)
  • 1 cup plus 2 tablespoons miniature semisweet chocolate chips
  • 2 tablespoons chopped pecans
  • 2 teaspoons sugar
Instructions:
  • Preheat your oven to 350°F. Grease the bottom of two 8x4-inch loaf pans with shortening and lightly flour them, or alternatively, you can spray the bottoms with cooking spray without flouring.
  • Combine flour, baking soda, salt, cinnamon, and nutmeg in a medium bowl; set aside.
  • In a large bowl, use an electric mixer to cream together 2 cups of sugar and butter until creamy. Then, add eggs one at a time, followed by water and pumpkin on low speed. Mix in the flour mixture until just moistened. Finally, stir in 1 cup of chocolate chips. Spread the batter evenly in pans and top with remaining 2 tablespoons chocolate chips, pecans, and 2 teaspoons sugar. Enjoy!
  • Bake for 1 hour and 5 minutes to 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a cooling rack. Allow the cakes to cool completely for about 1 1/2 hours.
