Gift unique star-shaped chocolate cookies for Christmas stocking stuffers.
Ingredients:
  • 150g butter, at room temperature
  • 150g (3/4 cup, firmly packed) brown sugar
  • 225g (1 1/2 cups) self-raising flour
  • 20.00 gm cocoa powder
  • 90g (1/2 cup) finely chopped a good-quality dark chocolate
  • 120g (3/4 cup) finely chopped good- quality white chocolate
  • 50g (1/3 cup) dark Choc Bits
Instructions:
  • Preheat your oven to 180°C.
  • Prepare 2 baking trays with non-stick baking paper.
  • In a medium mixing bowl, use electric beaters to whip the butter and brown sugar until light and creamy. Incorporate the egg and vanilla essence, beating until just mixed.
  • Combine the self-raising flour and cocoa by sifting them together. Fold in the sifted flour mixture along with chopped dark chocolate and chopped white chocolate into the butter mixture using a wooden spoon. Finally, bring the dough together using your hands.
  • On a lightly floured surface, roll out half of the dough to l cm thickness using a floured rolling pin. Use your favorite cookie cutters to cut out shapes and place them on lined baking trays 3cm apart. Gently press half of the Choc Bits evenly onto the cookies.
  • Bake cookies in the preheated oven for 15-20 minutes until crispy and fully cooked. Allow them to cool on the baking trays for 5 minutes before transferring to a wire rack. Repeat with the remaining dough and Choc Bits. Store in an airtight container.
