Chocolate Chipotle Truffle Pops

Spicy chipotle powder enhances rich chocolate truffles with a delicious kick.
Ingredients:
  • 11 ounces dark chocolate
  • 3 ounces heavy cream
  • 1 teaspoon vanilla
  • 1 - 1 1/2 teaspoons chipotle powder
  • 3 ounces butter
  • 8 ounces milk chocolate chips
  • Sea Salt
Instructions:
  • In a mixing bowl, place chopped chocolate. In a saucepan, heat cream until just before boiling, then add vanilla and chili powder. Pour the cream mixture over the chocolate. Let sit for 1 minute, then stir until smooth.
  • In a small mixing bowl, beat room temperature butter until light and fluffy, then mix in the chocolate. Pour the ganache into a baking dish, spread evenly, and chill for 1 hour.
  • Use a small cookie dough scooper to shape chocolate into golf ball sized balls and insert a lollipop stick into the top of each.
  • Melt milk chocolate until smooth, then swirl the chocolate balls in it to coat. Transfer to parchment paper and sprinkle with sea salt.
