Spicy chipotle enhances rich double chocolate cookies.
Ingredients:
  • 3 cups all-purpose flour
  • 1 tablespoon baking soda
  • 8 ounces semi-sweet chocolate, chopped
  • 2 cups butter, softened
  • 2 cups brown sugar
  • 1.5 cups white sugar
  • 0.5 cup cocoa powder, sifted
  • 2 teaspoons finely chopped chipotle peppers in adobo sauce
  • 1 tablespoon vanilla extract
  • 1 tablespoon water
  • 1.5 cups chocolate chips
Instructions:
  • Combine the flour, baking soda, and salt in a bowl and whisk until well mixed.
  • In a microwave-safe bowl, melt the chopped chocolate in 30-second intervals at 40% power, stirring after each interval, until chocolate is warm and smoothly melted, about 1 to 3 minutes. Let it cool slightly before using.
  • In a separate large bowl, cream together butter, brown sugar, 1 1/2 cups of white sugar, cocoa powder, and chipotle pepper using an electric mixer until smooth. Gradually add eggs one at a time, mixing well after each addition. Stir in vanilla extract and water.
  • Combine the melted chocolate with the butter mixture. Gradually fold in the flour mixture until fully combined. Add the chocolate chips. Cover the bowl and chill the dough for 1 hour.
  • Preheat your oven to 350°F (175°C) and prepare baking sheets by lining them with parchment paper.
  • In a small bowl, pour 1/2 cup sugar. Shape dough into small balls and then coat them evenly with sugar. Arrange the cookies on the baking sheets, spacing them about 2 inches apart.
  • Bake the cookies in the preheated oven for 12 to 14 minutes until set. Let them cool on the baking sheets for a minute or two before transferring to racks to finish cooling.
