Chocolate Chocolate Biscotti

Decadent double chocolate biscotti that stay fresh for days.
Ingredients:
  • 1 cup white sugar
  • 0.25 cup margarine, softened
  • 0.75 cup liquid egg substitute
  • 2.25 cups all-purpose flour
  • 1.25 cups unsweetened cocoa powder
  • 1 (5 ounce) milk chocolate candy bar, chopped
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease the cookie sheets.
  • Combine sugar, margarine, and olive oil in a large bowl, and cream together until smooth. Add vanilla and egg substitute. Mix in flour, cocoa, and baking powder. Fold in chocolate pieces. Chill dough covered for 10 minutes.
  • Divide the dough into two equal pieces, then roll each piece into a 9-inch long log. Arrange the logs on the cookie sheets, spacing them 4 inches apart. Gently flatten each log to a 1-inch thickness.
  • Bake in the preheated oven for 20-25 minutes until firm, then cool on sheets for 15 minutes before transferring to wire racks to cool completely.
  • Transfer the cookie loaves to a cutting board. Use a serrated knife to cut each loaf into 3/4 inch slices. Place the slices back on the baking sheet, bake for 8 to 10 minutes on each side until crispy, and let them cool completely before storing in an airtight container.
