Indulgent chocolate puddings with rich chocolate bits and ground hazelnuts.
Ingredients:
  • 100g butter
  • 100g brown sugar
  • 150g self-raising flour
  • 75g plain flour
  • 35g cocoa powder
  • 100g ground hazelnuts
  • 250g pkt dark chocolate bits
  • 125ml milk
  • Custard, to serve
Instructions:
  • Begin by preheating your oven to 180°C. Lightly grease 6 pudding moulds each with a 1-cup capacity (250ml) and line their bases with non-stick baking paper. Next, use an electric beater to thoroughly mix 100g of butter with 1/2 cup (100g) of brown sugar. Finally, beat in 3 eggs until well combined.
  • Gently incorporate 1 cup (150g) self-raising flour, 1/2 cup (75g) plain flour, 1/3 cup (35g) cocoa powder, 100g ground hazelnuts, 250g packet dark chocolate bits, and 1/2 cup (125ml) milk until well combined. Transfer the mixture into moulds.
  • Prepare the moulds with non-stick baking paper and foil, securing with kitchen string. Place them in a roasting pan and fill halfway with boiling water. Bake for 45 minutes, then allow to cool slightly before removing from moulds. Serve with custard.
