Delicious and easy chocolate cherry scones, a quick homemade treat to enjoy with various flavor options.
Ingredients:
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 5 tablespoons cold butter
  • 2 eggs
  • 1 cup whipping cream
  • 1 teaspoon vanilla
  • 1/2 cup dark chocolate chunks
  • 1/2 cup dried cherries
  • 1 teaspoon water
Instructions:
  • Preheat oven to 400°F and grease a cookie sheet with shortening or cooking spray.
  • Combine flour, baking powder, sugar, and salt in a large bowl. Use a pastry blender or two knives to cut in the butter until mixture forms coarse crumbs. In a separate medium bowl, beat 1 egg with a fork, then mix in whipping cream and vanilla. Add chocolate chunks and cherries, stirring until combined. Pour this mixture over the crumb mixture, stirring just until moistened. Avoid overmixing.
  • Place the dough on a lightly floured surface and give it a gentle knead 4 times. Shape it into a 7-inch circle that is about 1 inch thick. Transfer the dough to a cookie sheet. In a small bowl, beat the remaining egg and stir in water. Brush this egg mixture lightly over the top of the dough, and then cut it into 8 wedges. Gently separate the wedges so they are not touching.
  • Bake for 15 to 20 minutes until a toothpick inserted in the center comes out clean. Transfer from the cookie sheet to a cooling rack and let cool for 10 minutes. Serve warm.
