Delicious crunchy biscotti cookies with almonds or maraschino cherries for a delightful twist. Perfect for gifting or enjoying anytime!
Ingredients:
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 3 eggs
  • 1 cup white sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons orange juice
  • 1 cup chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a baking sheet.
  • Combine flour, baking powder, and salt in a bowl; mix well. In a separate mixing bowl, blend eggs and sugar until smooth. Add vegetable oil, vanilla extract, and orange juice; mix. Stir in chocolate chips and flour mixture until smooth. Divide dough in half and shape each into a 3x12-inch roll. Arrange rolls on prepared cookie sheet.
  • Bake the rolls in the preheated oven until golden brown, for about 20 minutes. Transfer the rolls to a cooling rack and let them cool for 10 minutes until comfortable to touch before slicing the mandelbrot into 1/2-inch thick slices. Lay the cookies flat on the baking sheet.
  • Place back in the oven and bake until a beautiful light golden color develops, approximately 15 more minutes. Let it cool completely on a wire rack before enjoying.
