Chocolate chunk muffettes

Irresistible bite-sized chocolate muffins are packed with flavor.
Ingredients:
  • Melted butter or margarine (optional), for greasing
  • 150g (1 cup) plain flour
  • 25g (1/4 cup) cocoa powder
  • 8.00 gm baking powder
  • 100g (1/2 cup, firmly packed) brown sugar
  • 75g dark chocolate, roughly chopped
  • 60g (3 tbsp) butter or margarine, melted, cooled
  • 80mls (V3 cup) milk or buttermilk
  • 26.40 gm raspberry jam
Instructions:
  • Preheat your oven to 180°C. Grease 24 mini muffin pans with melted butter or margarine and line with paper cases or use non-stick pans.
  • In a medium mixing bowl, combine the flour, cocoa powder, and baking powder by sifting them together. Add the brown sugar and chocolate, and stir until well mixed.
  • Combine the butter, egg, milk, and jam in a bowl, whisk until smooth. Pour the mixture into the dry ingredients and gently stir with a large metal spoon until just combined.
  • Evenly distribute the mixture into the muffin pans, then bake in a preheated oven for 12 minutes or until a skewer comes out clean. Allow to cool in the pans for 2-3 minutes before transferring to a wire rack. Enjoy warm or at room temperature, and store in an airtight container for up to 1 day.
