Get creative with fruits: oranges, clementines, apricots, or cherries pair perfectly with chocolate in this versatile recipe.
Ingredients:
  • 3 large free-range egg yolks
  • 5 oranges
  • 100 g quality dark chocolate (70%)
  • 80 g unsalted butter
  • 100 g self-raising flour
  • 100 g ground almonds
  • 100 g sugar
  • 2 large free-range eggs
  • 180 ml whole milk
  • 100 g quality white chocolate
  • 500 g crème fraîche or natural yoghurt (optional)
Instructions:
  • - Preheat the oven to 200°C/400°F/gas 6. - Zest 3 oranges finely, then peel, slice into wheel-shaped pieces. - Melt dark chocolate in a bowl over simmering water. - Butter a 20cm tin. - Combine flour, almonds, half sugar, sea salt, eggs, yolks, orange zest, and milk. Add melted chocolate and butter. - Pour batter into tin, poke in white chocolate. - Bake for 16-20 minutes until edges firm and center gooey. - Boil remaining sugar with water until golden caramel, add orange juice. - Serve orange slices with caramel over chocolate clafoutis and crème fraîche or yogurt.
