Chocolate Clementine Cake

Elevate yellow cake mix with juicy clementines and rich chocolate frosting for a decadent celebration cake.
Ingredients:
  • 4 clementines
  • 0.5 cup water, or as needed
  • 1 (15.25 ounce) package yellow cake mix (such as Betty Crocker®)
  • 3 eggs
  • 0.5 cup vegetable oil
  • 0.25 teaspoon orange extract, or more to taste
  • 0.25 teaspoon vanilla extract
  • 1 pinch salt
  • 1 drop red food coloring
  • 2 (16 ounce) containers chocolate fudge frosting
  • 1 clementine, peeled and finely chopped
  • 1 clementine, peeled and segmented, or more to taste
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease two 9-inch round cake pans.
  • Grate the zest of 2 clementines finely and reserve. Juice all 4 clementines into a measuring cup and top up with water to make 1 cup.
  • In a large bowl, combine clementine juice, zest, cake mix, eggs, oil, orange extract, vanilla extract, salt, and red food coloring. Use an electric mixer to blend until the batter is smooth, approximately 2 minutes. Pour the batter into greased cake pans and level the tops.
  • Bake cakes until a toothpick comes out clean, 24 to 29 minutes. Let cool in the pans for 10 minutes, then transfer to wire rack to cool completely, about 30 minutes.
  • Place cakes on a flat surface. Use a sharp knife to level the tops of the cakes, then slice each layer in half horizontally. Place one cake layer on a serving plate and spread 1/2 cup of frosting on top, then add another cake layer and 1/2 cup of frosting. Sprinkle chopped clementine over the frosting. Stack and frost the remaining two cake layers. Decorate the top layer with clementine wedges around the edges.
