Chocolate Coated Peanut Butter Crackers

Make gourmet peanut butter chocolate sandwich cookies using crackers in 1 hour - only 4 ingredients needed.
Ingredients:
  • 0.75 cup creamy or chunky peanut butter
  • 2 pounds chocolate almond bark, broken into pieces
  • 80 buttery round crackers (such as Ritz®)
  • 2.25 ounces colored candy sprinkles
Instructions:
  • Spread a generous amount of creamy peanut butter onto each cracker half. Gently press the peanut butter sides together to create 40 delicious peanut butter-filled sandwich cookies.
  • Gently melt almond bark in a double boiler over low heat, making sure the water does not come to a boil. Keep the chocolate melted over simmering water.
  • Coat each sandwich cookie in the luscious melted chocolate, letting any extra chocolate drip back into the pot.
  • Lay the cookies on waxed paper and promptly add candy sprinkles to allow them to stick to the warm chocolate coating.
  • Chill cookies in the fridge until the chocolate is firm, approximately 15 minutes.
