Crunchy coconut elevates decadent chocolate brownies.
Ingredients:
  • 175g roughly chopped unsalted butter
  • 175g roughly chopped dark chocolate
  • 3 lightly beaten eggs
  • 322.50 gm caster sugar
  • 125.00 ml dessicated coconut
  • 4.40 gm vanilla essence
  • 250.00 ml sifted plain flour
  • 42.90 gm sifted cocoa
  • icing sugar or cocoa, to serve
Instructions:
  • Preheat oven to 170ºC. Grease and line a 20 x 30cm baking pan. Melt butter and chocolate in a bowl over simmering water. Stir until smooth. Combine eggs, sugar, coconut, and vanilla. Mix flour and cocoa in a separate bowl. Fold chocolate into egg mixture, then add flour mixture. Spoon into pan and bake for 30-35 minutes. Cool, slice, and dust with icing sugar or cocoa before serving.
