Decadent 3-layer Nanaimo bars with a cookie crust!
Ingredients:
  • 0.5 cup butter
  • 0.25 cup cocoa powder
  • 1 egg, beaten
  • 1.25 cups crushed chocolate cream-filled sandwich cookies (such as OREO® Cookies)
  • 2 tablespoons instant vanilla pudding mix
  • 3 tablespoons heavy cream
  • 2 cups confectioners' sugar
  • 1 tablespoon vegetable oil
Instructions:
  • Prepare a 9x9-inch square pan by lining it with parchment paper. Melt 1/2 cup of butter in the top of a double boiler over simmering water. Once melted, mix in the sugar and cocoa powder until smooth and the sugar dissolves. Gradually whisk in the beaten egg and cook, constantly whisking, until the mixture thickens, about 1 minute. Remove the double boiler from heat and stir in the cookie crumbs until fully combined. Press the crust into the dish and refrigerate for at least 30 minutes until chilled.
  • Beat 1/2 cup of butter with vanilla pudding powder and cream in a mixing bowl using an electric mixer until fluffy. Gradually mix in confectioners' sugar and beat until very creamy and pale yellow, about 2 minutes. Spread the filling over the crust and chill in the refrigerator for at least 30 more minutes.
  • Melt semisweet chocolate chips with vegetable oil in a double boiler until smooth. Let cool slightly, then pour over the vanilla layer. Spread evenly and refrigerate for about 30 minutes until the chocolate sets.
  • Using a sharp knife, cut into 25 squares, then chill in the refrigerator for at least 15 minutes to overnight. Serve cold.
