Chocolate Covered Orange Peels

Transform food waste into decadent treats! Chocolate-dipped candied orange peels topped with nuts or sprinkles - perfect for gifts or parties.
Ingredients:
  • 2 large organic oranges
  • 2 cups granulated sugar
  • 2 cups water
  • 1 cup turbinado or granulated sugar, for tossing with the candied peels
  • 12 ounces (340g) semisweet chocolate, chopped
  • Colored jimmies or finely chopped nuts, for sprinkling
Instructions:
  • Line a half sheet pan or rimmed baking pan with foil, ready for action.
  • Prepare the orange peel strips by boiling them in a pot of water for 15 minutes after slicing them into 1/4-inch-wide strips. Start by trimming the tops and bottoms off the oranges, cutting the peels into quarters, removing them in one piece, and then cutting them into strips. Boil, drain, rinse, and set aside.
  • Create a flavorful simple syrup by mixing sugar and water in a saucepan, boiling over medium heat until the sugar dissolves completely, stirring occasionally.
  • Cook the orange peel in sugar syrup until very soft for about 45-50 minutes. Coat the softened peel with sugar, then let dry for 1 to 2 days in a well-ventilated spot or use a cooling rack for faster drying. Save the syrup for other purposes like sweetening cocktails or fruit bowls.
  • Prepare the orange peels: Once the orange peels are firm and dry, lay out a sheet of waxed paper on a baking sheet. Melt the chocolate in a double boiler or a heatproof bowl over simmering water until smooth. Dip each peel strip in chocolate, covering most of the peel, then place on the sheet. Add colored jimmies or nuts if desired. Allow the chocolate to set, then store in an airtight container with waxed paper between layers in the fridge for up to a month. Share your feedback below!
