Decadent chocolate date cake topped with chocolate chips and walnuts for the perfect balance of sweetness and crunch.
Ingredients:
  • 1.25 cups boiling water
  • 1 (8 ounce) package chopped dates
  • 2 cups all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 0.75 cup butter
  • 2 eggs
  • 1 cup semisweet chocolate chips
  • 0.5 cup white sugar
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare a 9x13 inch pan by greasing and flouring it. Pour boiling water over chopped dates in a mixing bowl or small saucepan and let it sit. In another bowl, sift together flour, cocoa, baking soda, and salt.
  • Cream together butter and 1 cup sugar in a large bowl until light and fluffy. Add eggs one at a time, then mix in the flour. Stir in dates with liquid until just combined. Pour batter into prepared pan.
  • In a separate bowl, mix together chocolate chips, walnuts, and the remaining 1/2 cup sugar. Sprinkle this mixture over the cake, then bake in the preheated oven for 35 minutes until a toothpick inserted in the center comes out clean. Let it cool before serving.
