Date-Chocolate Chip Cake

Indulge in a decadent date cake with a chocolate chip topping for a delightful dessert!
Ingredients:
  • 1 1/4 cups boiling water
  • 1 cup chopped dates
  • 1 teaspoon baking soda
  • 1/2 cup semisweet chocolate chips
  • 1/4 cup packed brown sugar
  • 1/4 cup all-purpose flour
  • 1 tablespoon butter or margarine, softened
  • 1 3/4 cups all-purpose flour*
  • 1/2 cup packed brown sugar
  • 2/3 cup vegetable oil
  • 2 eggs
Instructions:
  • In a large bowl, pour boiling water over dates and stir in 1 teaspoon of baking soda. Let it cool for about 15 minutes until it reaches a lukewarm temperature.
  • Combine all topping ingredients in a small bowl and set aside.
  • Preheat oven to 350°F. Combine all cake ingredients with date mixture and transfer to an ungreased 9-inch square pan. Top with the crumble topping before baking.
  • Bake for 50 to 55 minutes until a toothpick inserted in the center comes out clean. Allow to cool completely for about 2 hours.
