Date-sweetened chocolate cookies for a guilt-free treat!
Ingredients:
  • 8 ounces pitted Deglet Noor dates
  • hot water as needed
  • 1 cup chopped walnuts
  • 2 tablespoons vegetable oil
  • 1 egg
  • 0.25 cup rolled oats
  • 0.25 cup dark cocoa powder (such as Hershey's® Special Dark)
  • 0.75 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cup dark chocolate chips
Instructions:
  • Place the dates in a small bowl and cover them with hot water. Let them sit for 10 minutes to soften.
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare 2 large baking sheets with parchment paper.
  • Separate dates from water, keeping the soaking liquid. In a large food processor, blend dates, walnuts, and vegetable oil until a smooth paste forms. If the mixture seems dry, blend in soaking liquid gradually for a paste-like texture. Mix in egg and vanilla extract. Blend in oats, cocoa powder, baking soda, cinnamon, and salt until smooth, scraping the sides as needed. Gently stir in chocolate chips; dough will be sticky.
  • Scoop dough with a medium cookie scoop onto the baking sheets, spacing them 1-inch apart. Gently flatten the tops of the dough with damp fingers.
  • Bake the cookies in the preheated oven for 13 to 15 minutes until just set. Let them cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely. Store in the refrigerator until serving.
