Indulge in a decadent chocolate and date cake made with Gold Medal® flour for a delightful treat.
Ingredients:
  • 2 cups pitted dates
  • 3/4 cup water
  • 6 oz bittersweet baking chocolate, melted
  • 1/4 cup butter or margarine, melted
  • 3/4 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 1/2 cup whipping cream
  • 3/4 cup whipping cream, whipped, sweetened
  • Unsweetened baking cocoa, if desired
Instructions:
  • Preheat oven to 350°F and generously spray an 11x7-inch (2-quart) glass baking dish with cooking spray. In a 2-quart saucepan, simmer dates with water over medium-low heat for 8 minutes until dates are softened and liquid has reduced. Transfer the date mixture to a food processor and blend until smooth for about 1 minute. Add chocolate and butter, and blend until well combined and smooth, scraping down the sides of the bowl as needed.
  • Combine flour, baking powder, and salt in a small bowl. In a medium bowl, use an electric mixer on high speed to beat brown sugar, vanilla, and eggs until thick and pale. Mix in date mixture on low speed. Gently fold in the flour mixture until just combined. Slowly mix in 1/2 cup of whipping cream until fully incorporated. Transfer batter to a baking dish.
  • Bake for 25 to 30 minutes until firm. Let it cool for 10 minutes, then serve warm with whipped cream and a sprinkle of cocoa on top.
