Indulge in decadent chocolate espresso banana muffins.
Ingredients:
  • 0.5 cup unsalted butter, melted
  • 1 cup brown sugar
  • 3 ripe bananas
  • 1 cup oat flour
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons instant espresso powder
  • 1 tablespoon ground cinnamon
  • 0.5 teaspoon baking soda
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), and prepare 18 muffin cups by lining them with paper liners.
  • Add the melted butter to the electric mixer bowl, then incorporate the brown sugar, eggs, and bananas. Blend until fully mixed. Combine the all-purpose flour, oat flour, cocoa, espresso, cinnamon, salt, and baking soda until well combined.
  • Divide the batter evenly among the muffin cups.
  • Bake in the oven until the tops spring back when lightly pressed, for around 20 minutes.
