Chocolate Ganache Meringues

Indulge in decadent chocolate ganache-filled meringue sandwich cookies.
Ingredients:
  • 1/4 cup whipping cream
  • 3 oz bittersweet baking chocolate, cut into pieces
  • 2 tablespoons cold butter or margarine, cut into small pieces
  • 2 egg whites
  • 1/3 cup granulated sugar
  • 1/3 cup powdered sugar
  • 1/4 cup powdered sugar
  • 2 tablespoons unsweetened baking cocoa
Instructions:
  • Warm the whipping cream in a 1-quart heavy saucepan over medium heat until it simmers. Remove from heat and stir in the chocolate until melted. Gradually stir in the butter pieces until melted. Chill until thickened in the refrigerator.
  • Preheat oven to 200°F and line a cookie sheet with parchment paper. In a medium bowl, whip egg whites with an electric mixer until soft peaks form. Gradually add 1/3 cup granulated sugar and beat on high speed until stiff peaks form. Gently fold in 1/3 cup powdered sugar.
  • Combine 1/4 cup powdered sugar with cocoa in a small bowl. Gently fold the cocoa mixture into beaten egg whites in thirds. Transfer the mixture into a decorating bag with a star tip. Pipe 24 (1 1/2-inch) rounds onto parchment paper, spacing them about 1 inch apart.
  • Bake for 1-1.25 hours until crispy. Transfer cookies on parchment paper to a cooling rack and let cool for about 5 minutes until completely cooled.
  • Take one meringue cookie and generously spread the chilled ganache on the flat side. Then, gently place another meringue cookie on top to create a delightful sandwich. To keep the meringues perfectly light and crisp, store them in a loosely covered container at room temperature. In case of high humidity, switch to a tightly sealed container to maintain their texture.
