Indulgent coffee truffle bites - a sweet treat for two.
Ingredients:
  • 1 x 500ml ctn good-quality chocolate ice-cream
  • 50g Rich Dark Cooking Chocolate
  • 20g copha
Instructions:
  • Prepare 2 large plates lined with non-stick baking paper, and place one plate in the freezer to chill.
  • Soak a melon baller in hot water, then scoop out 1 ball of ice cream and place it on a chilled plate. Insert a toothpick into the center of the ball. Repeat to make a total of 6 ice cream balls. Freeze for 2 hours or until firm.
  • Combine the chocolate and copha in a small microwave-safe bowl. Microwave on medium/500 watts/50% power for 1 minute or until melted. Stir well and let it cool for 10 minutes before using.
  • Coat each ice-cream ball in the chocolate mixture, shaking off any extra. Arrange on the lined plate and promptly put back in the freezer. Repeat for all ice-cream balls. Freeze for 30 minutes or until completely firm.
