Indulge in irresistibly decadent chocolate lava cakes.
Ingredients:
  • 180g Baking Dark Chocolate, chopped
  • 250g butter, chopped
  • plain flour, for dusting
  • 107.50 gm caster sugar
  • 62.50 ml plain flour, sifted
  • Double cream, to serve
  • Cocoa powder, to serve
Instructions:
  • In a microwave-safe bowl, combine chocolate and butter. Microwave on medium-high for 1 to 2 minutes, stirring every 30 seconds with a metal spoon until fully melted and smooth. Allow it to cool completely.
  • Prepare eight ceramic dishes by greasing them and sprinkling with flour. Use an electric mixer to beat eggs and sugar until thick and creamy, about 8 to 10 minutes. Fold in chocolate mixture, then flour. Spoon the batter into the dishes and freeze for 1 hour.
  • Preheat the oven to 200°C/180°C fan-forced. Place dishes on a baking tray and bake for about 16 minutes until the cakes are just set and wobble slightly when touched.
  • Allow dishes to sit for 1 minute, then gently invert onto plates. Drizzle with cream and sprinkle with a dusting of cocoa powder before serving.
