Mint Chocolate Pudding Cakes

Decadent mint chocolate lava cakes with gooey centers and rich chocolate cake exterior.
Ingredients:
  • 6 ounces bittersweet or semisweet chocolate, chopped
  • 1/2 cup (1 stick) unsalted butter
  • 3 large eggs
  • 3 large egg yolks
  • 1/3 cup sugar
  • 1/4 cup all-purpose flour
  • 1 1/4 teaspoons peppermint extract
  • 1/4 teaspoon salt
Instructions:
  • Preheat the oven to 375°F, then generously butter six 3/4-cup (6 ounce) ramekins.
  • Melt chocolate and butter: Cut the butter into pieces and heat together in a small, thick-bottomed saucepan over low heat, stirring constantly until smooth. Take the pan off the heat and let it cool slightly.
  • Prepare filling: Use an electric mixer to whip together eggs, egg yolks, and sugar until slightly thickened, around 5 minutes. Mix in flour until fully combined. Add chocolate mixture, peppermint extract, and salt, and beat until just combined.
  • Transfer the chocolate mixture into the ramekins placed on a baking sheet.
  • Bake the cakes at 375°F for 10-11 minutes until the edges are set but the centers look shiny and jiggle gently when the ramekins are lightly shaken. Start checking at 9 minutes. Allow the cakes to cool for 5-10 minutes. Serve in the ramekins or flip onto dessert plates. Enjoy with raspberries, mint leaves, or a scoop of vanilla or mint ice cream. Bon appétit!
