Chocolate liqueur self-saucing puddings

Indulge in decadent chocolate desserts for a sophisticated celebration.
Ingredients:
  • 150g self-raising flour
  • 240g brown sugar
  • 50g cocoa powder
  • 125ml milk
  • 40g butter, melted
  • 1 egg, lightly whisked
  • 435ml water
  • 125ml liqueur
  • Vanilla ice-cream or thin cream, to serve
Instructions:
  • Preheat your oven to 180°C. Brush eight 3/4-cup (185ml) ovenproof dishes with butter to lightly grease, and place them on an oven tray.
  • In a medium bowl, mix together the flour, half of the sugar, and half of the cocoa. Add the milk, butter, and egg, stirring until just combined. Distribute the mixture evenly among the prepared dishes.
  • Combine the leftover sugar and cocoa by sifting them in a bowl. Sprinkle the mixture evenly over each dish and then pour the boiling water and chocolate liqueur evenly among each dish.
  • Bake in a preheated oven for 15-20 minutes until a cake top forms. Let it cool for 5 minutes before serving with vanilla ice cream or cream, if desired.
