White chocolate liqueur fudge

Ingredients:
  • Melted butter, to grease
  • 1 395g can sweetened condensed milk (Nestle brand)
  • 200g (1 cup, firmly packed) brown sugar
  • 125g butter, cubed
  • 50.00 gm liquid glucose
  • 100g white chocolate (like Nestle Milkybar brand), roughly chopped
  • 85g (3/4 cup) walnut halves, roughly chopped
  • 30ml (1 1/2 tbsp) liqueur
Instructions:
  • Prepare your pans by generously brushing them with melted butter to ensure a smooth release. Line the base and sides with non-stick baking paper, leaving some overhang for easy lifting later on.
  • In a 2-liter microwave-safe glass bowl, mix together sweetened condensed milk, brown sugar, butter, and glucose. Cook in the microwave on Medium-High/650 watts/70%, stirring every 2 minutes with a whisk, for 6-8 minutes until the mixture starts to boil.
  • Continue cooking over medium-high heat, stirring every minute, for 3-4 minutes until the mixture thickens, turns golden, and boils vigorously. Carefully place the jug on a board and let it sit for 1 minute until the bubbles disappear.
  • Combine the luxurious white chocolate and stir gently with a wooden spoon until velvety smooth. Integrate the walnuts and liqueur, ensuring a well-combined mixture.
  • Evenly distribute the mixture into the pans. Allow it to cool at room temperature for 2 hours until firm. Remove from the pan, wrap in greaseproof or non-stick baking paper, and store in an airtight container in the fridge. Slice the fudge into 1cm-thick pieces before serving.
