White chocolate panna cotta with amaretto grapes

Elevate juicy grapes with liqueur over creamy panna cotta for a gourmet treat.
Ingredients:
  • Vegetable oil, to grease
  • 360g white chocolate, coarsely chopped
  • 2 x 600ml ctns thickened cream
  • 70g (1/3 cup) caster sugar
  • 4.40 gm vanilla essence
  • 40.00 gm hot water
  • 12.00 gm gelatine powder
  • 125ml (1/2 cup) amaretto liqueur
  • 40.00 gm caster sugar, extra
  • 250g seedless red grapes
  • 250g seedless green grapes
Instructions:
  • Prepare a 1.5L (6-cup capacity) non-stick loaf pan by greasing it with oil. Combine chocolate, cream, sugar, and vanilla in a large saucepan over low heat. Stir and cook for 5 minutes until the chocolate melts and the mixture becomes smooth. Allow it to cool for 5 minutes before proceeding.
  • In a small heatproof bowl, combine hot water with gelatine. Place the bowl in a small saucepan filled halfway with boiling water. Whisk with a fork until the gelatine dissolves.
  • Combine the gelatine mixture with the cream mixture, then pour into the prepared pan. Cover with plastic wrap and refrigerate for 8 hours or overnight until set.
  • In a small saucepan over low heat, combine amaretto and extra sugar. Stir and cook for 3-4 minutes until sugar dissolves. Then, increase heat to high, bring to a boil, and reduce heat to medium. Add in the grapes and cook for 1 minute to coat them.
  • Transfer the grapes to a heatproof bowl using a slotted spoon. Increase heat to high and bring the syrup to a boil, cooking for 3-4 minutes until thickened. Pour the syrup over the grapes, then let it cool for 30 minutes. Cover with plastic wrap and chill in the fridge.
  • Soak the loaf pan in hot water, then invert the panna cotta onto a serving platter. Garnish with the grape mixture before serving.
