30-minute chewy marshmallow cookies with oats, PB, chocolate chips, and coconut dust.
Ingredients:
  • 2.3333332538605 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 0.25 cup peanut butter
  • 1 cup quick-cooking oats
  • 0.75 cup semisweet chocolate chips
  • 0.75 cup miniature marshmallows
  • 0.5 cup flaked coconut
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and get your cookie sheets ready by greasing them or lining them with foil.
  • In a large bowl, mix flour, butter, baking soda, and baking powder until fully combined. Beat in white sugar, brown sugar, eggs, and peanut butter. Stir in oats, chocolate chips, and marshmallows until a dough forms, using a spoon or your hands.
  • Prepare a plate or shallow dish with coconut flakes. Form the dough into 1-inch balls, slightly flatten them, and gently press one side of each cookie into the coconut flakes. Arrange the cookies 2 inches apart on the cookie sheets.
  • Bake until lightly golden, about 10 minutes in the preheated oven. Then, cool on wire racks.
