Decadent chocolate meringues with rich chocolate sauce - a chocolate lover's dream come true!
Ingredients:
  • 3 eggwhites
  • 161.25 gm caster sugar
  • 10.00 gm cocoa powder, sifted
  • 200g dark chocolate, chopped
  • 126.25 gm light thickened cream
  • 20.00 ml coffee-flavoured liqueur (such as Kahlua)
Instructions:
  • Preheat your oven to 150°C/130°C fan-forced and line 2 baking trays with parchment paper.
  • With an electric mixer, whip egg whites until stiff peaks form. Incorporate sugar and continue beating for 10 minutes or until sugar dissolves. Gently mix in cocoa powder until combined. Scoop leveled tablespoons of the mixture onto prepared trays, leaving 5cm of space between each for ideal spreading.
  • Bake for 12 to 15 minutes until firm. Turn off the oven and let the dish rest inside for 5 minutes with the door slightly open.
  • In a microwave-safe bowl, combine chocolate and cream. Microwave on high for 2 to 3 minutes, stirring every 30 seconds with a metal spoon until smooth. Mix in the liqueur.
  • Drizzle chocolate sauce over meringues before serving.
