Simplify entertaining with this decadent quick chocolate dessert.
Ingredients:
  • 80g dark chocolate melts, melted
  • 2 x 150g pkt Harringtons mint cream thins
  • 100g dark chocolate, chopped
  • 1 egg, at room temperature, separated
  • 160ml (2/3 cup) thickened cream, whipped to soft peaks
  • Nestlé Peppermint Crisp, finely chopped, to decorate
  • Chocolate-coated mint leaves, to decorate (optional, see tip)
Instructions:
  • Prepare a baking tray with a layer of baking paper. Fill a piping bag with the melted chocolate using a small nozzle. Create the walls of the box by piping chocolate along one edge of a mint thin square and attaching it to another square. Continue with two more squares to form four sides. Seal the bottom of the box by piping chocolate along all edges of one square and attaching it. Repeat this process to make a total of 8 boxes, chilling in the refrigerator as needed to set the chocolate.
  • Place the dark chocolate in a heatproof bowl and microwave on High until smooth and melted, about 1 minute. Let it cool slightly. Gently whisk in the egg yolk, incorporating a spoonful of cream if needed to prevent seizing. Carefully fold in the rest of the cream until the mixture is smooth and well blended.
  • Whisk the egg white in a clean dry bowl with electric beaters until soft peaks form. Fold it into the chocolate mixture and spoon or pipe the mousse into the chocolate boxes. Refrigerate for 2 hours to set.
  • Top with mint crisp shards and chocolate mint leaves for a beautiful presentation.
