Chocolate Mousse (lighter recipe)

Light whipped topping reduces fat for a simple, cool treat.
Ingredients:
  • 1/4 cup sugar
  • 1 cup half-and-half
  • 1 package (6 ounces) semisweet chocolate chips (1 cup)
  • 3 cups frozen (thawed) reduced-fat whipped topping
Instructions:
  • In a small bowl, use an electric mixer on high speed to beat the eggs for about 3 minutes until thick and a beautiful lemon color. Gradually mix in the sugar.
  • Warm the half-and-half in a 2-quart saucepan over medium heat until just hot. Slowly mix at least half of the hot half-and-half into the egg yolk mixture; then, pour it back into the saucepan with the hot half-and-half. Cook on low heat for about 5 minutes, stirring continuously until the mixture thickens (avoid boiling). Add chocolate chips and stir until melted. Cover and refrigerate for about 2 hours, stirring occasionally, until nicely chilled.
  • Gently mix the chocolate mixture into the whipped topping. Transfer the mixture into serving bowls using a piping bag or spoon. Refrigerate any leftovers promptly after serving.
